Gluten Free Buckwheat Pancake Mix
Rise & Shine Buckwheat Pancake Recipe
Rise & Shine Pancake Recipe:
- Measure & Mix well
1 ½ Cups of Pancake Mix, heaping
2-3 Tablespoons of Sugar (optional)
- Mix in a Separate bowl
1 ¼ Cups Milk or Milk Substitute
2 TBSP Lemon juice or White Vinegar
4 TBSP unsalted butter, melted (can use any butter substitute for dairy free)
1 Large egg
1 teaspoon vanilla, or other flavor extract (optional)
- Mix together!
Make a well in dry ingredients and slowly mix wet ingredients in with fork until you see no clumps.
Warm a skillet over medium heat, then add butter or oil to pan and spread around pan.
Once the skillet is heated (but not smoking!), measure about ¼- ½ cup portions of batter and pour onto skillet. Cook until the edges look dry and you start seeing some air holes in your pancake. Then, flip and cook a few minutes longer.
*note that the pan often gets hotter as you cook, so the pancakes may cook faster after the first few. It can help to turn the pan off and cool it once or twice to prevent burning.
If you’re cooking pancakes for a crowd, you can keep them warm in an oven set at the lowest temperature or a warming drawer while you finish cooking them.
